I have got all the weapons required for V's stash but for some reason, I can not add Overwatch or skippy, they just stay in my inventory. I haven't seen anyone else have this bug and I'm not sure how to go about fixing it. I have updated the game I've closed it out and reopened it.

i'm not 100% sure this is going to work, but you can get Johnnys items out of your inventory if you upgrade them. this should make the yellow little ( ! ) disappear from the items icon. I know collecting all of Johnny’s clothing items gets them out of your inventory, but I’ve also modified Dying Night as well.
