I got both Sharpshooter challenge 8 & 9 easily. Granted I didn't get either until the final few missions of the game though. In the mission where you finally take down Dutch you should get this easily you don't even need to use Dead Eye. Then wait a for a few missions and you'll also get nine just as easily.
